The Best Holiday Cocktails: Pomegranate Mint Mojito

While we all can’t travel to a warm island for the holidays, we can pretend we are somewhere nice and enjoy a Pomegranate Mint Mojito. Admittedly, I am not a huge fan of regular mint mojitos, but when you add muddled berries in it, something magical happens.

My traditional mojito cocktail I like to drink is made with blueberries, but I’ve changed it up for the holidays and experimented a pomegranate mint mojito. That odd fruit is in season during the holiday months, and is loaded with positive health benefits, so throwing it in a cocktail basically cancels out any guilt the rum might bring you. Also, the rum will help numb the frustration of figuring out how to open natures Rubik’s Cube (AKA the pomegranate). I learned how to open one the proper way several years ago and it has since saved me some squirts of red juice in the eye. Or, you could just buy the seeds.

All that said, I hope you try this summertime drink during the holidays. How could you not?! Just look at those festive colors.


Pomegranate Mint Mojito

Prep time 10 min
Yields 1 Drink

Ingredients

 

Juice from 1 lime
6 mint leaves, fresh
1/4 c pomegranate seeds
2 oz simple syrup
3 oz white rum
Soda Water (I used lime LaCroix)
 
 
Muddle mint leaves, pomegranate seeds, lime juice, simple syrup, and rum together in a thick glass. Add ice and top with soda water. Garnish with mint and pomegranate seeds.
