“What can I bring?” These famous last words before attending a party usually give me a bit of anxiety as now I am faced with what do I bring? The last party I attended I brought Bacon Wrapped Dates with Goat Cheese, and let me tell you, these little morsels of goodness are incredible.
Bacon Wrapped Dates with Goat Cheese is an appetizer that looks and sounds fancy, but is super easy to make and I have yet to find someone that didn’t like how they tasted. The saltiness of the crispy bacon paired with the nutty, creamy goat cheese and the sweet, meaty date combine to make a sweet and salty treat that you’ll find yourself eating just one more.
First of all, if you are questioning the dates, don’t. I can honestly tell you that I have never eaten a date outside of a fruitcake ever, and the use of them in this recipe adds the sweet contrast to the salty bacon and cheese. If you are wondering what dates are, they are a tree fruit most commonly grown in hot, arid climates. The most desired date is the Medjool date, which contain a lot of health benefits.
This Bacon Wrapped Dates with Goat Cheese appetizer is best served warm, so after I baked them I tossed them into a crock pot for easy transporting and serving at the party. That said, I was super excited that I brought home an empty Crockpot as they were a hit among the guests at the party.
How to Make Bacon Wrapped Dates with Goat Cheese
Making bacon wrapped dates with goat cheese is easy, but requires some up-front time to stuff each date and wrap with the bacon.
The dates must be sliced lengthwise and then stuffed with 1/2 teaspoon of goat cheese. Make sure you pinch close the date so the cheese doesn’t completely leak out when baking.
After you close the date, wrap each date with 1/2 slice of bacon and secure with a toothpick. Arrange each bacon wrapped date on a wire rack on a baking sheet with sides. There will be a lot of bacon fat drippings, so you’ll want to ensure you use the rack and the baking sheet with sides to keep each piece out of the fat and protect your oven.
After you remove the bacon wrapped dates from the oven, transfer to the crock pot or serving platter. Admittedly, I don’t think these are the best looking appetizer ever, but they taste amazing, and are sure to be the hit of the party.
Bacon Wrapped Dates with Goat Cheese
- 1 lb Bacon, thin sliced
- 32 Pitted Dates
- 8 oz Goat Cheese
- Preheat the oven to 400°.
- Slit the pitted date lengthwise and stuff with approximately 1/2 teaspoon of the goat cheese. Pinch it closed.
- Wrap each date in 1/2 slice of bacon and secure with a toothpick. Arrange dates on a wire rack within a jelly roll pan (cookie sheet with sides).
- Bake for 20 minutes, and turn each date after 10 minutes. Serve warm.
