Cranberry Orange Bread

  • 4 cups Flour
  • 2 tsp Baking Soda
  • 1 1/2 tsp Salt
  • 2 1/4 cups Sugar Reserve 1/4 cup for cranberries
  • 4 cups cranberries, sliced in half
  • 2 TB Grated Orange Rind
  • 2 Eggs
  • 1 cup Orange Juice
  • 1 cup Water
  • 2/3 cup Vegetable Oil


  • Preheat your oven to 350 degrees F and spray 2 loaf pans with non-stick spray.
  • Slice cranberries in half and mix in 1/4 cup of sugar so all are coated. Set aside. 
  • Mix together flour, baking soda, and salt. Set aside.
  • In a separate bowl, combine remaining 2 c sugar, grated orange rind, and vegetable oil. Add eggs and mix well.
  • Gradually add flour mixture, orange juice, and water to sugar mixture. Once all mixed together, add cranberries.
  • Divide batter into the two greased loaf pans and bake at 350 degrees for 35-45 minutes
